1) Is there a way to know when someone makes a purchase from an ad they clicked on in your site? Any report available for adsense publishers?

2) Is there a way to know which exact ads are pulling in clicks? Any report available for adsense publishers?

(If the answers are 'no', wouldn't it be good for all concerned if publishers did have this info?)

The advertiser is the only one who knows that. Some AdWords advertisers participate in a system that gives Google that information at least part of the time; Google does not share that information with AdSense publishers.

Roll your own. Various JavaScript solutions have been deemed to not violate the letter of the Terms and Conditions. Search the archives of this forum for examples.

No. Try being an advertiser for a while (always a good exercise for anybody who wants to be a decent publisher) and see how you feel about Google sharing your crucial numbers with whomever they choose.
