If you have multiple domains you have adsense ads on do you setup seperate accounts for it, or do you use one account and use channels to track the performance of the different domains? Does it matter to Google which way you do it?

I have one account and 3 different websites - no issues thus far

You are only allowed one account.

You can put your ads on as many domains as you like as long as they are within the TOS. You can track the different domains with channels.

Thats right - each legal entity can have one account, so you can have one account, and if you have a company then it can have a separate/different account of its own.

I think you actually have to have a corporation and ask permission from Google to get a separate account (their pages state pretty specifically that each publisher can only have one account):
