I realize CPC is based both on max CPC offered and ad performance, but is there any way to get a sense of how much clicks are costing for specific keywords?

Sign up for adwords -> plug in the amount you'd like to pay, and see what the 'estimated' position for your ad(s) are. Then you can get a rough idea what the cost per click is for those keywords.
Other than 'going through the motions' I don't know of any short cuts.
