I'm applying for an AdSense account, but we haven't launched the website yet and don't want it indexed yet (the URL is live, we hadn't set up a test environment).

I have to put the website name into the application for Google AdSense, will Google index my site if I put the address in there?

You should hold off applying for an AdSense account until your site is fully active and launched - their policies state that the site must be launched. Some have posted here that their sites have been rejected because it wasn't launched and/or in the Google index yet.

From the policies:

Site must not contain broken links and must be launched, functioning, and easily navigable.

No, Google won't index your site just from the URL on your application for AdSense. If you are looking for a quick way to be indexed, just get some relevant links pointing to your site and Googlebot will do the rest.
