I have an FTP client called WS FTP. I am able to connect to my remote sire files. Can anybody explain how I can transfer (copy) the sire folders and files onto my local?

Open up your local destination folder in the left window of WS-FTP. Then highlight the files you want to transfer. Click the left arrow between the two windows . Or you can right click on the selected files and select "operations" then "transfer".

By doing so, the files on the remote site will only be copied on the local folder (as opposed to being removed from the web server and transferred to my computer). Am i right?

Yes, thats right. Oh, and welcome to WebmasterWorld.
By the way I usually highlight then drag and drop either amongst the files on the right or into a relevant folder and let technology take over ;)
