I want to learn about web hosting and stats analysers before I put a site live. I made some research about it but a lot of the information I get, beg a lot of new questions.

Please, could anyone give me some info about it or direction as to where I can find this kind of information.

Try going to the SEO portions of WebmasterWorld and look at the 'Library' entries for each forum that interests you. You might want to start with the "Tracking and logging" forum (which is in the webmaster section, not the SEO section after all) based on your question.
