Select the area you want to keep.
Then go to "image" ... and "crop."

Quick way to crop:

Hit "C" on your keyboard, then drag your crop-marquee area (the stuff that ISNT going to be cropped will go darker), double click on it when you got it how you like it... and Vola. Cropped :)

General Photoshop tip: KeyCommands are your friends :)
