I'd like to use a button that's oval and allows you to change the text within the button easily. Any advice?

Have you done a search for free icons [google.com], or free buttons [google.com]?

I just bought xara webstyle on ebay which lets you design hundreds of this type of thing and it only cost £3.99 worth every penny.

I personally like "the button generator". Most of the buttons there, are free (google it).

If you right click a button and save it, is it possible to open it in Fireworks or Photoshop and edit the text of that button? If so, how?

no, you could "cover up" the text and replace it with your own if you really wanted to... but dont use buttons from other peoples websites... look up a program called crystal button, not free but it has a trial version you can use... you do know photoshop has some premade buttons dont you?
