One example would be "hunting" a niche of that may be "black powder rifle hunting" or even more targeted: "bear hunting with a black powder rifle".
To me a niche is just a specific market that is easier to optimize for then the broad term.
In terms of traditional marketing, you could use the following example:
Market: Recruitment
A niche in that market: IT recruitment in London
It's a very useful concept to understand for search engine optimisation, as markets tend to be a general subject area (and all inclusive keywords), and I would view a niche as a specific part of that market.
It makes sense, both off and online to target campaigns at specific niche markets - it can be very cost effective (sometimes very lucritive) and you would see a higher conversation rate than simple mass marketing (*cough* spam).
For example, an online market could be the search term "Widgets".
Now as a SEO, if this was a competitive market, it would be very difficult for you to achieve success - such a broad search term and lots of competition.
So, what most do is try to target niche terms, such as "Blue widgets", "Widgets for sale in London", "How to use widgets", etc.
I would view each of these terms as a seperate niche market and create a product (page) for each, and target each (optimise for them) individually - instead of just trying to target "widgets".
This way the traffic is much more qualified (ie, it's people looking for what i have rather than just window shoppers).
A smart SEO / marketer will be able to identify niche markets in order to more effectively target consumers. (note, it's somewhat easier online to identify niche markets with the use of keyword tracking tools - offline, you need a lot of experience, market research or luck - or all 3!).
The aim (or dream in many cases!) is to find an untapped niche market - one in which you have no competition! Find it and guard it carefully! ;)
For example you may be one of 10 restaurants in a local take away market. Your niche may be Indian food along with 3 other restaurants.
So you compete not only within the take away food market, but also within the Indian food niche market.
Then you find your customers really want cigarettes with their deliveries, and you are the only restaurant to offer this. Congratulations - you have found a small untapped niche market!
But, take advantage of it while you can because very soon all restaurants will offer cigarettes with their deliveries and you will lose your edge! :)

The word niche is relating to constructing a web site for a single item or a few of the items in the same category, so take your first word on doing a search at google it returned quality hunting fishing and camping gear so you could build your site around one of these items
Example 1
Camping - tents, sleeping bags, flashlights, cooking equipment is a niche site of the items in the same category
Example 2
Camping - choose one of the above items and construct a site around this item would also be a niche site
The idea behind this is instead of having a large site listing everything break it down into smaller niche sites specializing in only a few or singular items to get a better ranking by using key phrases and keywords in the title and description of each page on your site

I recently did a study for a client that wanted to take on Bass Pro.
Fly fishing is a very specific niche you could probably service better than they can: e.g. there is no fly-fishing shop that has all the major brands of rods, and a complete selection of flies and baits. The clientele usually also has more disposable income and the commissions are better.
But anyone of their main menu headings is probably a niche that can be had: Saltwater fishing, Hunting equipment...
Going after a niche is smart: I'd rather be a big fish in a small pond since you can usually make more money that way than being a small fish in a bigger pond. Just make sure your market is lucrative enough to be sustainable, and you can have a reasonnable chance of detering competition from entering "your" niche (usually by offering a better and unique service).
