moving to another dedicated server

I have backed up the databases and public html areas. what else should I backup and move? named files? log files? mail files? help :)

I'd only move what I need to "make the business run" efficiently and profitably. IF it's data that I haven't had a need to examine for several months then I'd leave it. Why continue to accumulate what you don't employ anyway?
