How many sites, interlinked, is cool for one IP, on shared hosting, or with one host?

If your sites make enough money to pay for additional IP's or separate hosting accounts, that's the best way to go.

Shared hosting *can* be a danger if a spammer on the same IP gets it banned.

You said interlinked... this makes having separate IP addresses even more important. When you interlink sites you preferrably would like to make the SE's unaware that you run all the sites, so as to avoid a penalty or a depreciation of link value. Typically the experts recommend that you use different IP addresses for each site, and that they have different C-blocks at the very least (aaa.bbb.CCC.ddd). Of course, if they had different A- and B-blocks that would be even better.
