We use SPAMCOP which can be found by searching on Google. It cost $30 per year, but it's worth it to us.

99.9% of return addresses in spam are just made up, that's why if you reply it will get returned. Most major spam companies go after the IP address the mail was sent from. That's harder to fake if a smart tech person from that IP starts looking into the issue.

Up until recently I didn't realize how simple it was to setup a mass spam email system. All someone needs is a pc running linux, apache, and php. With a simple script using sendmail() one can change the headers to make the email appear like its from anyone they want. Pretty sick huh.

We also use spamcop. I also forward a copy of the email with the email headers to the addresses listed in spamcop and to uce@ftc.gov

I also take Corey's approach, although according to this page [ftc.gov ]
I forward spams to spam@uce.gov. Another option, if you have the time, is to read up on any laws for your state/country that deal with spam, and then sue the spammers if you can. A web search for "sue a spammer", would be a good start.
