Just got a dedicated server in USA with Webmin control panel but I have no technical knowledge at all and just moved from shared hosting. All I want to do is get my PHP/mySQL website on the server and get it secured. My old hosting company say they need my IPS tage for my domain names to moved to - do they mean my IP address?

They are referring to the TAG relating to the host. This post about domain name transfer [webmasterworld.com] should clarify the situation.
