Use Rich Text Format (RTF).

Plain text does not support colours, so they must be using RTF or HTML.

Some e-mail clients (including mine) will grey out text below a row of hyphens in a plain text e-mail, assuming what follows is a signature. This is purely a client behavior and cannot be induced by the sender of the e-mail. If I change the setting from two hyphens to none, for instance, no text would be greyed out.

Two hyphens followed by a space used to be the standard Usenet method of prefixing a signature (-- ). It seems to work on GMail and a few other places.
