I'm changing web host and so far I've only ever used cPanel to control my hosting package and I've always found it simply to use and it seems to be the preferred control panel for the majority of web hosts, including the one I am thinking of signing up with.

I've failed to find anything on the net that compares the two packages from a user's point-of-view, so I'd appreciate any information you can give on using H-SPHERE (even better if you’ve used both packages).

I've used H-Sphere on my hobby site for a couple of years now. I've used cPanel only once or twice. cPanel looks to be a plain, simple, easy to use Control Panel. H-Sphere looks to be a bit more complicated. In reality, they both do basically the same job as a Control Panel. I don't think you should be overly worried about switching between the two. They aren't that much different in the user interface. I'd class myself as being tad above a novice user.

I prefer cPanel. I've used both in the past and find their functionality to be about the same. But cPanel is easier to use IMO and seems better organized.

Both do the same job but go about it in different ways. Cpanel is a very simple, easy to use control panel that. Emphasis on simple. HSphere does the same things but offers many more settings, allowing you greater control over accounts. The drawback to this is that it takes much longer to do many tasks.
