The website and the domain are seperate entitites. The domain transfer is done by domain registration companies. They'll have to initiate the transfer through their registrar, you'll get an email and have to approve the transfer.

The website, you'll either have to send them the files from your web server, or give them access to your account on your webserver.

This is a bit more than a domain name issue.

It might help to know if the same webhost will be used, along with the same servers and O/S.

Frankly, this might do better in the Webmaster General forum since you've imbedded questions about email servers, database servers, stats, etc. That's beyond the gist of what's covered in the Domain Forum.
