Have you thought of creating a page on your site asking for article submissions with a FAQ for what you will accept and in what manner you want them submitting? I would also include what you will give them in return.
Some of the things I like in return for articles include a bio – 45 words (approx) with link to my homepage, keyword rich of my choice. I really like it if I can only provide a portion (1/3) of the article with a keyword rich text link back to my site where the reader can find the rest of the article. I also want the bio with the additional link to my homepage.
I would then go looking for sites I like, within my theme, with content that is good and contact them. I would offer them what I can, exposure with links and bio or whatever. I take these opportunities to think not only of the content but also establishing a relationship.
baccillus, one thing you should watch out for is the country someone who writes content for you comes from, I use UK English where many others would use US English. Big difference when it comes to search engines, in some areas more than others.
Since there is no money involved, it'll be a little harder.
what paynt proposes sounds good. Im in a similar situation where I need more content, but only from qualified people...figuring out a way to verify if someone submits info they are legitimate sorta thing.....
But your visitors sound like the best way to get more content - from the people who went out their way to find the same sort of info.

Well, I have a FAQ Page with Article submission guidelines but haven't added what they will get. that is something i have to work on :)

No doubt! I'm sure there is proof from someone here who can say they started out that way. I guess its just a matter of the way you present the site and the proposition of writing the content for free. If its something like "save the rainforest" im sure many will be willing. If it was "line my pockets" then maybe not :) (or at least it would be harder to persuade/subvert) :)
