One of my client has e-commerce site (not accepting credit card online) but collecting user information and selling products, where the buyers transfer the money via wire transfer.

What are the standard contents suggests:

1) DISCLAIMER

2) TERMS OF USE

3) OUR PRIVACY POLICY

Should I have all these 3 subjects in the site?

What are the subjects / contents I should cover under each subjects?

Those are not suggestions, those are requirements. Trust is a big key to shopping online, especially if you are wiring the money and the last two are key to building trust.

Don't forget an "About Us" section - adding some info about the site, the owners, its history, etc. can be a confidence builder.
