Hi
We would like to relaunch site with improvements and in so doing create subdomains to which we intend to move all (many thousands) of content pages. like this: subdomains.examplesite.com

The purpose is to re-establish Google indexing and make seo & site improvements.

Currently none of the content pages are being indexed by Google. This is almost certainly due to duplicate content issues.

How do we properly set up and terminate old addresses (not getting any google foo)
(http://www.examplesite.com/contentpages) we do not want to use redirect from old URLS to new.

also how do we set up httpd conf so that we will not create seo nightmare?

Is this advisable?

should we just go fishing?

Thanks!

If you genuinely don't want to redirect, returning a 410 "gone" will eventually make google go away. But what about your established human visitors? The ones coming in via old bookmarks or type-ins, so they won't have a referer? Give some thought to your custom 410 page so they don't feel that you've abandoned them.

should we just go fishing?

I do not understand the precise significance of "just". Get a doctor's note saying it is essential for your health ;)
