Which Apache? What about current PHP and Sites?

New to this and struggling

Hi there. Please forgive my ignorance. I'm on Mac OS X.4 (Tiger, I think...) I have php installed and have used scripts on a site. I want to start to develop data driven sites so I need Apache but the apache site recommends the latest and greatest 2.23 version and states to install it I must turn off web sharing but will that impact sites currently running? There are copies on the servers but if I want to edit the htmls or the .phps will I encounter problems? Can I still use the earlier version of Apache and not have to turn of the sharing?
I have soooo many questions! Like I think I have MySQL running but do I need apache to know or to make the prompts in Terminal behave properly? Well, I'll get to that in the right forum..
Is there a good source of info for the true "dummy" (no, 'php and mysql for dummies' didn't dumb it down enough for me - all of this seems to require more of a programming background than I thought!)

So you are already running an http server, or no? You can install whichever version of Apache you would like. There are tons of servers still running 1.3.
