I have "inherited" a site that appears to have a shopping cart and a number of .mvc files. What are these and/or what language or program are these file types associated with?

This is a very good file extension lookup site:

[filext.com...]

.mvc is listed there, with a link to relevant information.

Actually, if the site you inherited has the Miva Merchant shopping cart then the .mvc files should be in the data directory and are index type files for the database that runs the cart.

This web site lists "almost" all the file extensions (although I notice that .mvc is not there)...

.mvc files are Miva Merchant 4.14+ files.

note(prior to this version they where .mv files, which where interpreted by the Miva Empresa Engine, instead of the Virtual Machine which is used now by the compiled version)

so basically Miva Corp decided to add a "c" to .mv files to show it was a compiled Miva Merchant Store
