Transfering IMAP mail account to another server

I am in the process of moving all my sites onto another dedicated server (linux). However, there is one thing I'm not sure how to handle. One of my clients uses a web-based interface for their mail, rather than downloading it all to an email client. She has set up various folders and has a large amount of emails archived. How do I go about transfering all those emails and folder structure onto the new server?

That would depend on the application being used for mail. Most likely you could setup the same application on the new server and simply transfer the data. What's the mail app?
