There are so many to choose from (or collect). My experience is with the free Darwin (QuickTime) Streaming Server, and I have known people to use Helix (RealPlayer) servers with good results. I haven't looked into Flash servers lately but I have heard of Wowza, and I know nothing about Microsoft's presence or other options in this field.
I am just a virtual dilettante. What do the professionals do?
