How widely used is the category tag. I find it very useful when using IE7 to view a feed but what about aggregators? Do they use them to categorise links in feeds into a directory format?

The only issue I see with the category tag is no standards. It appears you can put anything you want in a category tag, whether that be a name for a category you think your feed should be in, or a category from another site (such as dmoz or syndic8) that you think your feed should be in.

There may be standards for it, that I haven't just run across yet, though.
