Will Google Index Page not in Sitemap?

I have a lot of pages and was wondering if Google will still index pages not in my sitemap? Is it better to include just main pages, or all the pages I can?

Yes, if the page is linked to from another page on the web and indexing is allowed for that page, then Google should get it eventually. Sitemaps don't guarantee guarantee listing or non-listing according to Google.
