Hi,
I'm about to do a rebuild of my site and i'm wondering what the best way is of writing them.
I'm currently thinking about 1 of 2 ways, for example:

domainname.com/holidays/europe/turkey
or
domainname.com/cheap-holidays-turkey

Is there any other options?
If not what would you recommend?

The 2nd option without hesitation.

Fully agree, the less sub-directories the better.
