AppleMobileDeviceService.exe is the only "helper" software that iTunes installs and it is easily shut off and disabled forever.


That's incorrect, ITunesHelper.exe is the "helper" that is automatically installed on your computer, runs in the background constantly looking for updates, and can't be shut off permanently since it turns itself back on (and re-installs itself when deleted).

IpodService.exe also does something similar though doesn't put up the same fight when attempting to remove.

When you're using your computer, but not using your ipod or the itunes service, there is NO good reason for these to run constantly yet that is what they are set up to do, 24/7/365. Shame on apple for this.
