My case might have been an unusual one...

I started with a one-page website (home page only) to begin with and it achieved PR3 at its first Google update and ranked #1 for two of the most competitive (global) keywords...

Now the site has 19 more static pages and 4 of them rank in top-10 for cumulative 13 keywords on Google.

With all this statistics and all your opinions, my opinion is that be it a niche or not and irrespective of number of pages what matters is the relevant content (the more original, the better) and thematic back-links (quality over quantity).
