Log files are generated by several parts of your system, i.e. the mail server, webserver, login routines, security cron jobs etc. You have to consult the man pages of each of these daemons to find out how to stop logging.

Probably easier is to exclude /var/log from the backup routines.

I personally make daily off-line backups of my log files in order to be able to trace back hacking attempts in case my server gets compromised.
