In terms of keeping up-to-date with security patches and not breaking dependencies, I always recommend sticking with the versions of PHP and MySQL that your distro shipped with. If you really need updated versions, it's probably better to update the entire distro - have you checked if the version you want to use are included in Fedora 8?
