But I agree with the idea of taking a percentage. If the site is profitable, then why miss out on your slice of the pie? If it is not profitable, then your friend will be upset at you for the loss. If he reduces the price for you on a regular basis, why not take 10% of the sales. This profit will cover your time to set up the site and the maintenance on it. Just make sure to put your agreements in writing. Profits have a funny way of changing peoples memories.
You can 'prove' the time you spent on the project by documenting you activities as you go. This is a VERY useful way to avoid disputes later. In the case of the surf shop, if your work log shows that you worked 50 hours, and only billed him 10, then you will appear to be a good guy.
