---- What Code to Use for a Group of Words in the Body Text?

Let me first say that I am posting this in this section instead of the coding section because my question is not about how to code something, but what to code it, and I believe that what is used can help the contents of a page to be better understood and help in rankings.
On a page, I have the following:
After the h1 tag, I have the body text section, and it contains the following:
Remembering My Summer Vacation (a few words to get this part of the page going)
The Link to the Next Page (This is a phrase that is linked to the next page, or a sentence in which some of the words are the link)
For the paragraphs, I am using <p> tags. Each paragraph is several sentences. For Remembering My Summer Vacation and The Link to the Next Page, it is just written out, they are not in any tags, but I think that they should be. I first thought that I would use the <span> tag, so I would have <span>Remembering My Summer Vacation</span> and <span>The Link to the Next Page</span>. I could style the tags in an external style sheet or inline. But then I thought that the use of the <span> tag does not create the feeling of the text being an entity, the way that words in a <p> tag, an <h1> tag or other tags do. It feels more like a group of words on a page.
I am thinking that I could use a <div> tag or a <p> tag. Remembering My Summer Vacation and The Link to the Next Page are not really paragraphs, so I am not sure if the <p> tag would be the right tag to use.
What do you guys suggest? Would it be okay to use the <p> tag, would a <div> tag be better or should I use the <span> tag?
On another page, after the last paragraph, I have written my signature:
I have the same question for this. Should I use <p>, <div>, or <span>?
I appreciate your advice. With the right coding, I think that it becomes easier for a search engine to pick up the contents of a page.
