If the "old" pages are listed in search engines, have incoming links, and attract visitors then use the 301 redirect to get the page out of the search results, while still channeling visitors to the correct page for all of the time that you still have entries in search engine results and links from other sites. When the search engine results have indexed the new pages and you have updated all your incoming links to point to the new pages, check to see if any visitors still arrive via the redirect. As soon as there are none, you can remove the redirect.
