My set up works as follows.

The customer places the order, and I am notified via email that an order has been placed. I log into my secure server, review the order and process the credit card offline using software provided by my bank. Once the order is processed, the credit card details are deleted from the server.

I set this up because I thought it would be a cheaper way to go, and I believe it is.

The biggest drawback is that it's becoming time consuming to manually process the cards. If you are only getting a couple of orders a day, it's no big deal, but it can become a hassle once the volume increases.
