My question is if I try to settle/capture a Google Checkout authorization after 7 days will it get denied? Would I have to re-submit the authorization and settle/capture again?

They release the authorization, but you can still charge the order after 7 days.
Its just that there is no fund guarantee you will need to wait a few hours until its gets processed again
