Not sure about the speed differences between the two 'presses.
As far as open source software goes -- you really have a lot of options. Apache/MySQL is probably the most common, but far from the only.
When selecting server software, you must take several pieces of information into consideration.
What type of site?
What type of hardware will it run on?
How familiar are you with customization options?
How will data be stored/accessed/updated/reported on?
There are many factors which come into play. That said -- most setups can handle all scenarios reasonable well, so go with what you can easily administer.
As for a host ... Well, colocation or a fully hosted solution is always the best. But it's far from the cheapest option.
