Updating numbers in one table from values input from another

I'm going to try to explain this the best I can, because I'm stuck!

So, I have a table with fields ITEM and AMOUNT.
I have a form that pulls the ITEM names and a field to manually type in amount that will be input into another form for a daily report. What I would like to do is have the amount input automatically subtracted from AMOUNT in the table.

Where I'm stuck with, is the items vary. So how can I have variables automatically assigned from ITEM field, and have it match up and subtract from that item's amount?

For example:

Order is:
Item 1 - 224 units
Item 3 - 450 units
Item 7 - 233 units

i need to somehow have it recognize by name in dropdown list item 1 and have $AMOUNT-$orderamount, then re-instert into AMOUNT
