By deleting the icon from the dock, you only deleted the alias to the original app. Go in to your Applications folder look for Mail.app, drag the icon on to your dock and you will have re-created the alias.

Click the blue magnifying lens icon in the upper right hand corner of your screen. When the search box appears, type "Mail." It should come up as the first hit. Click to open it, then right click the icon in the dock and select "Reveal in Finder" then move it to your Applications folder.
