I am using the Local Search Control (which is a search box embedded within a Google map - link to Google Map API example below) and need advice as to how to customize it so that an overwritable text of my choosing (e.g., "pizza") could be coded in, in place of where the example says "search the map".

This is quite a specific question, I hope someone can answer it for you (as you've found a great place to engage in Local Search discussion), but I get the feeling that asking the same question at the specific Google Maps API Discussion Group will improve your chances of finding an answer.
