I have an spf record on our server that looks like this:

v=spf1 a:our.vps.host.ip mx ~all

If I wanted to send email from home using that server through outlook, would I add the host to the spf record, looking like this:

v=spf1 a:our.vps.host.ip a:my_host mx ~all

Workstations shouldn't need to be listed in the spf record, only servers. Each server that transmits the message is the sender, for spf purposes. Of course, your server will need to be configured to allow relaying from your particular workstation, but that's generally a separate issue.
