How to add an H1 tag to an image

The main keyword on my website that should go into my H1 TAG is not visible to search engines because it's part the header .gif file:
<img src="../images/header2.jpg" width="778" height="252"></td>
If I had a line below it the copy shows up and looks awful.
If cloak it, that's not good either.
So what do I have to do to use my H1 tag with my main keyword so the search engines can see it?
