Using Java or jQuery to store info while <form> passes it to 3rd party

I'm using a simple form to securely send credit card data to an online gateway to process donations for a nonprofit.

The site owner needs for the customer's info to be stored in a database that he can access (minus the credit card info) and also add contacts to at will. The gateway doesn't have an easy way to access this customer info, so we need to store it ourselves.

I figure that Java / jQuery will be the best route, but I haven't been able to find any off the shelf script to do what I need. Can anyone point me to something that I can configure to fill this need? (Coding it from scratch isn't an option at this time)
