I'm looking for separate shortcut keys to upload files to a testing server and a remote server. I know I can use Ctrl-Shift-U to upload files, but currently that shortcut will only send files to the server that is "connected". Is there a way to make Ctrl-Shift-U upload to the remove server, but something like Ctrl-Shift-T upload to the testing server? Thanks!

Don't think that is possible - you can edit existing shortcuts via the edit menu, but I have not seen a tool that allows you to write your own for new commands. I think the DW workspace is limited to one 'remote' area at a time - even if that area is a local testing folder. Seems pretty linear - maybe there is a hack enabling the switch between 'put' destinations while in file view mode. If not might be a handy addition...
