When sending an html email, what width should the table be to cater for best email client compatibility?

The email marketing company we use to send our newsletters specifies that html messages shouldn't be much wider than 600px. And I've noticed that if we go over that mark some of our newsletters don't render the best in some email (mostly older) clients.

I'm not sure about the max number of columns, I wouldn't think that would matter as long as the total width didn't exceed the standards? We use two columns, and now that I think about it, some of the html templates this company offers are three columns wide so the number of columns shouldn't affect anything.
