I'd like to know how to do this, too, since the videos I want never seem to be available, either. I assumed only select videos were in the program, so to speak.

As far as I know it's not possible. I like you, tried and couldn't find a way for it to work. It would be nice that's for sure.

You can either let Google's algo pick it for you or pick all videos from one partner. At this time Google is not allowing any video to be picked since it wants to make sure that the video does not have inappropriate content and complies with copyright law.

It is possible to choose specific individual videos to appear in your video unit. You can find details on how to do so here:
If you select a video that isn't opted-into the video units program, you'll see default several of YouTube's most popular videos.

Thank you very much for your response AdSense Advisor (and everybody else). As the other people have commnented, every individual video I have tried to pick up hasn't been available via Adsense/Youtube.

Sorry to hear that the videos you selected were not opted-in to the video units program.
If you find that default video content is playing in your video units, you might want to consider selecting content categories or automatic targeting.
