two different Google Results, only minutes apart

Anybody getting two different results (very different) on Google? I guess different data centers. I clear my cookies just to be sure.

Same browser, same computer, only minutes apart. It seems to go back and fourth.

I've had this happen occasionally through the years. Yes, load balancing needs alone can redirect a query to a different data center. I haven't seen it today, but it sounds like you "got lucky" ;)

I was wondering if there was a new algo update over the Easter weekend that would cause a new set of SERP's?

Not that I know of, I haven't seen any new reports of any algo updates.
