Ive moved my site to a new server and IP address. For now I also kept the site on the old server so I didnt lose my rankings. How do I know when the new server has been picked up by the search enginges so I can take the site off of the old server.

Search engines could care less about your IP. They follow the domain to the DNS server to your content. As long as your site is always reachable through the DNS server, you should lose no ranking.
