Is it me or is there no way to know exactly what product someone bought through these networks?

I have a few PPC campaigns going. When I drill down in the reports all it shows is which banner or text link I used.

How am I supposed to know where to focus my efforts?

Linkshare has an "Individual Item Report" that shows which products were purchased.

Most major networks have the ability to pass a special parameter (SID at CJ, bfinfo at BeFree, u1 at Linkshare) that will get reported when there's a sale. You can use that to identify which keyword got clicked, which should give you some indication of which products are getting purchased. For instance:

Ahhhh....I see!
I can see what sold at BeFree.

At CJ you need to click on the "Show Advanced Options" when getting links.

Can I add SID's "on the fly" or do I need to go into CJ and define each one first?

This ShopperID thing seems like it could be pretty powerful and allow you to track sales in a number of different ways.

You can add them on the fly, but be careful that you don't do it wrong and break a link. Create one through the interface and then just follow the example.

Also, in CJ, sometimes the banners will have a "URL=" tag in them for the menu'd creatives, if you use this links independently for better targeting through PPC, make sure you add the "sid=" tag before the "URL=" otherwise it breaks the redirect to the consumer site.
