My Windows Update downloaded the whole xp service pack 2 but I don't want to install it until it's safe. What can I do? If my version is superceded in the next few days or weeks, can I delete this old uninstalled one? And when will it be safe to install this thing?

Windows Update is only supposed to download the appropriate subset for your version (if you got it this early I assume you have XP Home). So you didn't get the 200+MB developer version.

What can I do? If my version is superseded in the next few days or weeks, can I delete this old uninstalled one?

If Windows makes further updates then those uninstalled parts should be detected by Windows Update when you finally do decide to install. I'd suggest you save your bandwidth, use the copy you've already got, and use Windows Update to get up-to-date.
