can someone give me a rundown of the archive function of vBulletin.

how does it work and how customisable is it? Which posts get archived...can I specify: posts older than x days, posts with more than x messages, etc, etc.

How does it work?

The only control panel variables for the archive are the number of threads per page and the number of posts per page. So, anything else will be a hack of some kind. The display template is easy enough to modify, but the sort of logical processing you mention will no doubt need to be built into the PHP code.
